How is rum produced?

Focus on Sugar Cane:

It is a 2.5 to 6 meter tall plant containing 72% water.

Its growing cycle can last from 4 to 10 years (before needing to be replanted) and it is cut by machine or by hand.


The two main ways to make rum:

1. Agricultural rum

Step 1: The freshly cut sugarcane is crushed and its juice is filtered.

Step 2: The vesou (fresh cane juice) is left to ferment for 2 to 3 days with wild yeasts. The resulting cane wine has an alcohol content of 5 to 7%.

Step 3: The cane wine is placed in stills where the alcohol evaporates and condenses to reach 55%.
