The first step in making agricultural rum is to cultivate the sugarcane on Martinique's plantations. Once harvested, the sugarcane is pressed to extract the juice, also called vesou . This juice is transported to the distillery, where it undergoes fermentation where the natural yeasts present in the vesou transform the sugars into alcohol. This process can last several days, and the result is a fermented must made from sugarcane juice. The fermented must is then distilled in stills to obtain white rum. Distillation is a complex process that extracts the characteristic aromas and flavors of agricultural rum. The aromas of French products blend harmoniously with the spicy notes of the rum, creating an unforgettable taste experience.
