- In a salad bowl, prepare a to-die-for vinaigrette with Menton IGP yellow lemon jam from La Cour d'OrgĂšres , old-fashioned mustard, a pinch of fleur de sel, and a dash of cider vinegar and olive oil.
- Grate some nice zucchini from the market and add them to the salad bowl. Mix them with the vinaigrette.
- On a cutting board, lift lemon segments and cut them into cubes, before adding them to your preparation.
- Sprinkle with mozzarella cubes and coriander leaves (or chopped fresh mint, for those who aren't keen on coriander). You can also add a few walnut kernels to add a crunchy touch to the salad.

- In a bowl, make your vinaigrette by mixing Corsican clementine jam PGI from La Cour d'OrgĂšres , a little Corsican clementine juice, fleur de sel, freshly ground pepper and a drizzle of olive oil.
- Slice the scallops horizontally to obtain very thin slices. Arrange these slices on a plate in a harmonious manner (why not in a rosette or staggered pattern, depending on the artist in you).
- Dice some Corsican clementines and place them in a bowl.
- Place everything in the refrigerator until ready to serve. When it's time to serve, simply drizzle (without drowning!) the scallops with the vinaigrette and sprinkle them with the clementine pieces.
